4 week wild ferment in a mix of ceramic, stainless steel & oak vessels - no malolactic conversion - aged 10 months in the same vessels, on fine lees (with battonage/stirring)
A very well-made wine - notes of peach, pear, acacia flower, honey & with some age, minerality becomes more intense too - the palate is dry, soft & well balanced - long finish & lingering acidity
